How to Make Juicy Diner Burgers at Home

Inspired by Jennie’s Diner Bonnyville 

Diner food is comfort food with a fun twist, the kind of food we love to share with friends. So it makes a perfect meal to share for a casual get-together.

Diner Burgers with pickled red onions.

Ground beef – preferably extra lean 1.5 Kg will be enough for 8 burgers.

Seasoning Salt. 1 teaspoon

Spicy Pepper Medley (La Grille) 1 teaspoon

Mix all ingredients in a metal or glass bowl. Form into 2 inch balls and pat into patties about 1/2 inch thick. (If barbequing instead, make a bit thicker) These will cook quickly. Cover with plastic wrap and chill until ready to grill.

To Grill:

Heat your fry pan on medium high, preferably a cast iron one, until hot (but not smoking!) Add a touch of canola oil to pan so patties won’t stick. Fry on one side until juices pool on the top of the burger. Flip and cook until juices run clear. Check the inside of the burger to make sure that it is thoroughly cooked – no pink.

 

Pickled Red Onions

2 large red onions, sliced thinly.

1 cup white vinegar

1 cup sugar

1/2 teaspoon pickling spice.

Heat the vinegar in a large pot. When hot, add sugar and stir to dissolve. Add pickling spice and heat for 5 min. Add sliced onions. Simmer in brine until soft. You can serve this hot or chill for later. Makes a beautiful and tasty garnish.

To build burgers:

Let your guests build their own. Offer the buns (you can toast lightly in the oven if you like), cheeses – cheddar and swiss are great choices, lettuce, tomatoes, the pickled red onions, and the usual condiments- ketchup, relish, mayo and mustard.
