Gourmet cook O’Brien (Gluten-Free Vegan Comfort Food) ensures there is nutritional value in her gluten-free vegetarian recipes by including complex carbohydrates such as teff, coconut, and almond flour. Her focus in this book is to make meals that the whole family will enjoy.
They sound tasty (Quinoa Burgers, Coconut and Banana Waffles, Easy Spaghetti Casserole, Delicious Dairy-Free Chocolate Pudding) and they are meant to be a part of a family’s sustainable lifestyle (eating organic, in season, or with bulk foods). At the beginning of the book, the author shares her favorite must-have foods (organic coconut oil, kelp noodles, mocha, and sauerkraut) and basic ingredients to include in a well-stocked pantry.
The recipes are divided into Breakfast Dishes, Breads, Muffins and Scones, Soups and Salads, Main Dishes, Side Dishes, Desserts, and Snacks, Sauces, Pantry Staples, and Everything Else (like Anti-Inflammatory Green Smoothie). There are recipes for making your own nut milks and information the author has learned over the past few years about gluten-free foods. If a recipe is “quick and easy” it is labeled as such, and most recipes serve 4 to 6.
The recipes are easy to read and the measurements are in metric. In the middle section of the book, there are eight colour photographs of the completed recipes. Some of the recipes take about an hour to make (Moussaka, Roasted Cauliflower and Butternut Squash with Polenta) while others take about thirty minutes (Summertime Mixed Vegetable Curry, Grilled Vegetable Stack, Healing Miso Soup). The recipes appear in columns; the ingredients on one side of the column, the directions on the other.
There is a very casual, yet personalized feel as you read through the author’s notes about each recipe. “I first tried this recipe out on adults, and they loved it. Then I tried it out on my grandson, and he declared, ‘Too much spice!'” Families who want to try this diet may be inclined to pick up this cookbook because the cover makes what’s inside look very appealing.
