Christmas Appetizer: Stuffed Mushrooms and Toasted Pesto Points

A fun delicious appetizer for your Christmas party.

To serve 4 people:
Ingredients:
1 dozen stuffer mushrooms
1 package Cream Cheese
2 teaspoons seafood sauce
1 package (300 grams) 70/90 count cooked tiger prawns
1 tin crab meat- drained
garlic butter- 2 tablespoons for sauteing
1 teaspoon dried dill
a generous squeeze of lime juice
salt and pepper to taste
Sliced Mozzarella cheese- cut to fit your stuffed mushrooms.

Pesto Points:
Ingredients:
8 slices whole grain bread
Pesto of your liking. We used Classico Basil.

Directions:
Remove stems from the mushroom caps and wash in warm water and drain. Pat dry. (It is a fallacy that you should not wash mushrooms…guess where they are grown!) Heat a saute pan. Add garlic butter. Saute both sides of the mushroom caps. Remove from heat and place in an oven proof dish open side up.
Remove tails from the prawns. Chop into coarse 3-4 cm. chunks. Mix together softened cream cheese, prawns, drained crab meat, seafood sauce, dill, lime juice, salt and pepper. Using a spoon or scoop, fill each mushroom cap. Top with a slice of mozza. Pop into a preheated 350 degree oven for 15 minutes or until mozza is melted to your liking.
While this is melting, toast the bread for the Points. Do not butter. Cut into quarters diagonally. Top with pesto. Arrange on plate.
When mushroom caps are nicely melted, remove from oven and arrange on the plate with your points.
Wait for the compliments from your guests!
