Inspired by UFO Pizza St. Paul

A salad that will please everyone in your family from the meat lover to those who are trying to eat healthy.

Ingredients:
2 tablespoons finely diced onion
1 clove garlic, diced finely
1/2 teasp Souvlaki Seasoning- Epicure brand
1 teaspoon oregano
1/2 teaspoon black pepper
1/2 teaspoon Sansel Arriba Seasoning from Epicure (if you can’t find this, use 1/4 teaspoon of cayenne pepper)
1/4 teaspoon salt or to taste.
1 ounce wine
1 cup 10% cream

Salad:
3 cups lettuce (in bite size pieces)
sliced red and yellow peppers

Thinly sliced beef roast

Directions:
Saute onions and garlic in 1 teaspoon butter until the onion is tender. Deglaze the pan with 1 ounce red or white wine. Add spices. Simmer until reduced by 75%. Add the cream and reduce again. Add the sliced roast beef. Add to the top of a bed of lettuce and peppers.

The sauce also acts as your dressing. You can substitute sliced cooked chicken breast instead of the roast beef. Salads are a great way to experiment. Try other vegetables as well.
